You can dream about someone you like, dream that you are in a place you want to visit but can't in the real world, and so on. There are just some simple practices one has to do in order to easily control the dream. For you to dream what you want more often than not, the very first thing you should do is to think about what you want to dream of before going to bed. It is even better if you have a journal you can write on wherein you'll describe the dream you wish to have in detail, draw some pictures of the scenes, and so on, so you'll have lucid dreams with less difficulty.
Next, you should set your alarm clock so that you'll wake up 4 - 6 hours after you sleep, and then, try to remember everything you've dreamt, list it down or say everything you've recalled and record it using a voice recorder, then, go back to sleep and check whether you'll dream the continuation or something connected to the previous one. If the continuation or something that's related is what you start 'seeing' while asleep, then, you've become successful at lucid-dreaming.

Once you are able to frequently control the dream, there are many benefits you can enjoy. Aside from having fun e.g. being able to fly in the dreams, going on a date with a famous Hollywood actor or actress, and so forth, there are other perks you can experience when you know how to have lucid dreams.
One is that you can stop having nightmares. Since you can actually dream what you want, you can turn a nightmare into a good dream e.g. when dreaming of being chased by demons, you can will the ending to be God's angels protecting you from the demons and bringing you with them to heaven to meet God.
You can also use astral projection for skills improvement. For instance, if you are a pianist who lacks confidence in playing in front of a large crowd, you can order your brain to give you dreams of playing in a large venue while people are giving you a standing ovation - having these recurring dreams will give you more confidence and also improve your piano playing skills. If you're a soccer player who has not scored even a single point for the team after months of playing, you can control the dream and dream what you want e.g. you being the top scorer in various soccer games, so that in real life, you'll be more motivated, confident, and think positive thoughts that can help you lead your team to victory.
